Popeye Pasta!

Here's a gluten free recipe that I made recently that I think you will all enjoy:

POPEYE PASTA

INGREDIENTS - (Serves 4)

*8 ounces gluten free pasta
*2 1/2 tbsp. olive oil
*2 garlic cloves, minced

*2 1/2 tbsp. lemon juice

*1 (10 ounce) package of baby spinach

*1/3 cup parmesan cheese

*1 1/2 cups cherry tomatoes (halved)



DIRECTIONS -

Cook pasta according to package directions / Drain / Place in large serving bowl

In a large skillet, heat over medium heat 1 tbsp oil and add garlic and 1 tbsp lemon juice / Cook for 1 minute - stirring

Increase heat to medium high and add spinach / stir for 2-3 minutes / remove from heat / toss with pasta


4)
In a medium bowl, combine remaining 1 1/2 tbsp oil and 1 1/2 tbsp lemon juice / stir in cheese and tomatoes


5)
Add tomato mixture to pasta/spinach mixture / toss


6)
Season with salt and pepper and serve!
