Savor Some Tasty Tomato Sauce!

A few weeks ago, I received a package from Dei Fratelli asking me to try out some of their gluten free products. They sent me 2 cans of crushed tomatoes, 1 can of whole tomatoes, and 1 can of chopped tomatoes.

I have been meaning to make tomato sauce using these products for quite some time and finally got around to it this weekend. I'll get to the recipe I used for the tomato sauce later on in this post. For now, I want to tell you about Dei Fratelli and some of their great products!

First of all, all of Dei Fratelli's products with the exception of their tomato soup, are gluten free. This gluten free product selection includes:

Another few of the ingredients that I used to make the tomato sauce were the Simply Organic Spices. Now, for the Tomato Sauce recipe!

INGREDIENTS:
28 oz. of crushed tomatoes
6 oz. of tomato paste
1 tsp. sea salt

1 tbs. basil
1 tbs. oregano
1 tsp. garlic
a dash of pepper

DIRECTIONS:

1) Combine all ingredients in a large pot.

2) Stir over low heat and let cook for approximately 3 hours.

Why Not Bake A Cake?

As was recently featured in the New York Times, the American Cancer Society asked students at the Culinary Institute of America to reinvent the classic birthday cake using healthier ingredients.

One of the four finalists, Lorraine Tran, chose to bake a gluten free angel food cake filled with a yogurt-berry mousse (as photographed above).

In order to bake this gluten free cake, you will need:

For the Cake -

*1 Cup Gluten Free Flour
*1/4 Tsp. Salt
*1 Tsp. Xanthan Gum
*1 1/2 Cups Sugar
*12 Egg Whites (at room temperature)
*1/2 Tsp. Cream of Tartar
*1/2 Tsp. Vanilla Extract
*1/2 Tsp. Orange Extract
*Zest of Lemon

For the Filling -

*3/4 Cups Sugar
*2 Cups Yogurt
*Juice of 1 1/2 Lemons
*1 1/2 Tsp. Gelatin
*1 1/2 Tsp. Water
*1 Cup Heavy Cream
*1/4 Cup Fresh Pureed Strawberries
*Assorted Fresh Berries


Directions for the cake -


1. Preheat over to 365 degrees. In a medium bowl, sift gluten free flour, salt, xanthan gum, and 3/4 cups of sugar.

2. Beat the egg whites until foamy. Add the cream of tartar. Beat until the egg whites form soft peaks. Beat in the reserved 3/4 cup of sugar gradually. Beat until stiff peaks form.

3. Slowly fold in the flour mixture, about 1/3 cup at a time, until combined. Once the flour mixture is combined, fold in the vanilla extract, orange extract, and lemon zest.

4. Pour into 8 inch cake pan. Bake in over for about 30 to 40 minutes, until golden brown or until a skewer poked in center comes out clean. Allow to cool.


Directions for the Filling -


1. Combine sugar, yogurt, and lemon juice with whip.

2. Combine gelatin and water, heat until melted.

3. Whip cream until soft peaks form. Fold gelatin into yogurt mixture, then fold in whipped cream.


Combining the cake and the filling -


1. Cut cake into two layers. Hold cake firmly on table and with a cake knife slice slowly through the side to divide it into two.

2. Put a layer of cake into a spring form pan lined with acetate liner. Cover it with berries and then a thick layer of mousse.

3. Add second cake layer and garnish with mousse and extra berries for a fresh look. Refrigerate for at least four hours, until set. Remove from pan.

4. To create topping, use homemade or store-bough whip cream and berries to garnish. Or to accomplish the look in the photo, make sure the top layer of mousse is very thin. Cover the chilled and set cake with fondant and fondant decor.

Let's Go To Blue Hill!

One of my favorite restaurants in NYC is a place called Blue Hill. In fact, you may have heard of it when in May 2009 President Barack Obama and his wife, Michelle, went for a "date night" at the establishment.

Although the restaurant does not have a gluten free menu, they are very accommodating to those on a gluten free diet. Each time I have eaten there I have been in awe of all of the delicious flavors I've been able to taste!

Last week, I went to the restaurant and had a delicious meal. Since, I couldn't eat the bread they brought me out a small bowl of cherry tomatoes to start. For my appetizer, I had crabmeat between sliced cucumbers in an avocado salsa. My entree consisted of duck with roast potatoes and broccoli rabe and as compliments the waiter brought out a delicious assortment of coconut covered marshmallows and dark chocolate covered toasted almonds - both gluten free, of course!

The restaurant has another location in Westchester for those of you who are not in NYC. The NYC location is open every night after 5:30 PM for dinner.

New Products From Caesar's!

Caesar's Pasta has just added 2 new frozen pasta products to their gluten free line. They are Potato Gnocchi and Spinach Potato Gnocchi! Both new products are also vegan in addition to being gluten free! And they make for a quick dinner - cooking in under 3 minutes!

"If It Isn't Fresh, It Isn't Legal!"


Legal Sea Foods has been serving gluten free cuisine for the past several years, however, recently they have revised and updated their gluten free menu and I must say that I am quite impressed with the changes!

The flour that is now used to fry various items on their gluten free menu is chick pea flour instead of the corn flour they previously used. They also just added gluten and dairy free "everything" dinner rolls and french rolls for their hamburgers and lobster rolls to the menu. Both the dinner rolls and french rolls are made by the brand, Gillian's Foods. Below you can see pictures of these 2 new additions:

Go To Telepan!

A great restaurant in New York City that I have now been to twice is amazing at accommodating those on a gluten free diet! The restaurant is called, Telepan, and they serve an extensive menu and are able to make many items gluten free.

The restaurant is located on the upper west side at 72 West 69th Street between Columbus Avenue and Central Park West. They are open for brunch on the weekends, lunch (Wednesday - Friday), and Dinner (every night).

The first time I went was for dinner and I enjoyed the following dishes which were all able to be altered around a bit to make them gluten free and they were delicious!

Stop For Cupcakes!

Great news everyone! The Cupcake Stop now sells gluten free cupcakes on Tuesdays in NYC!

For those of you unfamiliar with the Cupcake Stop, it is a truck that travels throughout NYC selling cupcakes to those on-the-go.

The gluten free cupcakes are baked in a dedicated gluten-free kitchen and are stored in separate tupperware containers from the regular
cupcakes on the truck.

The cupcakes are by the gluten free brand Everybody Eats and are available with vanilla cake and either chocolate or vanilla frosting. I can assure you that you will find them absolutely delicious! They are a bit costly at $3.25 each but it is money well spent.

1-2-3 Gluten Free!

In June 2009, when I attended the Fancy Food Fair in NYC I was introduced to so many gluten free products.

Gluten Free iPhone?

Today is directed at all of you who currently have an iPhone or are looking for a reason to purchase one. Yesterday, I was checking out the Application Store at iTunes and came across several gluten free applications. There were 2, in particular, that I thought seemed great!

Is That Gluten Free? was released on July 29, 2009 and retails for $5.99. It features over 13,500 verified Gluten Free products from over 300 brands. You can search for gluten free items by category, brand, or product name. Even better is that there are frequent free updates with new products and brands and a one-touch link to the company's website to find out more information on the product.


The other application that I love is Gluten Freed - A Gluten Free Dining Guide. This application was released on May 09, 2009 and is FREE. Your iPhone will locate where you are and this application will provide you with a list of the nearest gluten free restaurants around you. The following photograph shows you an example of what you will see on the screen when you click to find the nearest gluten free restaurants.

Join The Tribe!

One of my favorite spreads to enjoy in the summer is hummus! It is great to enjoy with sliced vegetable sticks or by dipping Trader Joe's Gluten Free Rice and Bean Chips into it! It makes for a great snack or a light meal.

Delicious Nutritious Bars!

Back in June at the Fancy Food Fair in NYC, I discovered a gluten free nutrition bar that I loved! It's by a brand called NuGo Nutrition.
