Let's Bake Gluten Free Challah!

Last night I decided to bake some gluten free chocolate chip challah! The recipe wasn't too difficult and it turned out great!

You will need the following gluten free ingredients:

[Yields: 1 Loaf Gluten Free Chocolate Chip Challah ]

* 1 package active dry yeast
* 1 teaspoon sugar
* 1 cup warm water
* 1 1/2 cups cornstarch
* 3/4 cup white rice flour
* 1/2 cup brown rice flour
* 1/4 cup tapioca flour
* 3 tbsp. almond meal
* 1 tbsp. xanthan gum
* 1 tsp. salt
* 2 tbsp. dry potato flakes (or instant mashed)
* 1/4 cup melted butter
* 1/4 cup honey
* 4 eggs + 1 extra yolk (room temperature)
* 1/8 tsp. vanilla extract
* 1/2 cup chocolate chips
* PAM Butter Spray

Now, for the directions:

1) Add yeast and sugar to warm water. Cover with plastic wrap. Let sit in oven with oven light on for 10 minutes.

2) Mix cornstarch, white rice flour, brown rice flour, tapioca flour, almond meal, xanthan gum, salt, and potato flakes in mixer.

3) With mixer running, add yeast mixture. Then add melted butter and honey.

4) Add eggs and vanilla extract to mixture. Mix until blended. Then beat on high speed for 2 minutes. Fold in chocolate chips.

5) Spoon batter into a greased 9x5 inch loaf pan.

6) Wet hand and use to smooth top surface of batter.

7) Cover pan with plastic wrap sprayed underneath with Pam butter spray.

8) Let rise for about 45 minutes.

9) Cut 2 diagonal lines across top of bread to allow steam to escape.

10) Sprinkle a few additional chocolate chips on top.

11) Bake in preheated 350 degree oven for 45 minutes. After first 20 minutes, cover with foil.

12) Rub top with butter and then let cool.
