Peanut Butter!

I have loved Pamela's Products for a long time.  Their Dark Chocolate Chunk cookies are something I would not want to live without.

Recently, I was sent a box of their Peanut Butter cookies to sample.  This cookie is soft and chewy and gives off a delicious peanut butter aroma.  It even has little pieces of peanuts chopped up and spread throughout the cookie.  I really enjoyed it!

The cookies are good enough to eat as is but I decided to get a little creative and make a "cookie sandwich" with these cookies.  I took 2 of the peanut butter cookies and put a piece of gluten free chocolate in the middle and heated it in the microwave for a few seconds.  The result was delicious!

If you haven't yet tried Pamela's Products Peanut Butter cookies, I suggest you look for them the next time you're at the grocery store!  You won't be disappointed!  And I love that in addition to being gluten free, they are dairy free, corn free, potato free, and soy free.

These cookies are also free of trans-fats and are sweetened with only molasses, grape juice, and rice syrup. They are certified Kosher too.

Naked Pizza?

Tomorrow is Macaron Day in NYC!

I have always loved macarons and I loved them even more after discovering that they are gluten free!  The traditional French macaron is made out of ground almonds, sugar, and egg whites.  If you are in the NYC area, tomorrow is the 2nd Annual Macaron Day!  This means you can go to any participating macaron shop and pick-up a free macaron!

Challenge Yourself!

Pamela's Products has partnered again with the Gluten Intolerance Group (GIG) for the 2nd Annual Gluten-Free Challenge.  This event will take place the weekend of May 21st to May 22nd, 2011 during Celiac Awareness Month.

This event aims to prove that one can enjoy food on a gluten free diet.  Last year, more than 1500 people signed up to eat entirely gluten free for one weekend.

Sign-up for the Gluten-Free Challenge by visiting www.goGFchallenge.com.  The official launch will be on April 21st, 2011, when participants will start to receive a recipe/tip everyday for 30 days.  In addition to the recipes and tips, there will also be coupons, weekly giveaways and more.

Below I have included an example of one of the recipes featured in the past.

Blueberry Corn Pancakes

Ingredients:

  • 1-1/2 cups Pamela's Baking & Pancake Mix
  • 1/2 cups Pamela's Cornbread & Muffin Mix
  • 2 eggs
  • 3/4 cup soy milk (substitute with regular milk or water)
  • dash of salt
  • basket of berries
  • optional: 1 ear of cooked corn off the cob (or 1 cup frozen)
Directions:

Mix dry ingredients.  Mix liquid ingredients and add to dry mixture.  Pour 1/4 cup batter onto the pan, (sprinkle corn kernels into batter if using), then sprinkle blueberries onto baking pancakes.  Flip when browned on the first side.  Serve with blueberries or maple syrup.

Gluten-Free on a Shoestring?

Whether you've been on the gluten free diet for a long time or you are just starting out, you've no doubt realized that it can be very expensive.

Nicole Hunn, the personality behind the Gluten-Free on a Shoestring blog, has written a book on how to spend the least amount of money possible while on a gluten free diet.  She gives advice on what products to buy and where to buy them and includes 125 easy recipes for you to try.

In an excerpt from her book, Gluten-Free on a Shoestring, she writes,
"In fact, the Canadian Dietetic Practice and Research reported that gluten-free foods can cost nearly 250 percent more than conventional foods.  If you're newly gluten-free, you're probably still suffering from sticker shock.  One day, you're spending a modest $2.50 for a loaf of bread at the supermarket, and the next, you're paying $8.00 or more for a gluten-free version.  Or you go from paying $1.99 for a whole box of chocolate chip cookies to paying $7.00 for a tiny package of just six."

There are a wide variety of recipes in her book and she includes advice about how to alter them so that they are dairy free, as well.  Some of the delicious recipes included are:

Time to Bowl!

On Sunday, March 27th, Randi and Rob Albertelli are hosting a Gluten Free Bowling Bash to benefit the Celiac Disease Center at Columbia University.

It will be held in Syosset, New York at AMF Syosset Lanes (111 Eileen Way).

The cost is $30 per person and includes:

  • unlimited bowling
  • gluten free refreshments
  • silent auction (checks and credit cards will be accepted)

According to MarketResearch.com, the US Market for Gluten Free foods has reached $2.6 billion this past year.  It is predicted to exceed $5 billion by 2015.  This is great news for all of us on a gluten free diet as it most likely means we will be seeing more new products pop up on shelves.

One new product that is expected to hit shelves in late May 2011, is a gluten free version of Kellogg's Rice Krispies cereal.  Stay tuned for more information!

I've recently discovered a new flavor of soup by Kettle Cuisine that I just love!  It's their Thai Curry Chicken Soup!  If you've never tried it, look for it at your local health food store!
