I recently discovered a 100% gluten free bakery in the town of Huntington on Long Island called Wild Flours Bake Shop. They sell a large variety of gluten free baked goods including cookies, scones, muffins, brownies, cupcakes, pies, breads, cakes and other delicious desserts. In addition, they have some seating so you can enjoy a scone with a cup of tea right in their store.
In their baked goods, they tend to use a bunch of different gluten free flours - hence, the name "wild" flours instead of just using the most common gluten free flours (rice, corn, etc.). The flours they work with include: arrowroot, brown rice, cabernet, fava bean, garbanzo, mesquite, millet, potato, sorghum, sweet rice, teff, tapioca and quinoa.
Many of their products are vegan and select products are available for shipping!
In addition, they serve organic, fair trade, and/or socially responsible coffee, unrefined sugar and chocolate. Their baked goods are made with filtered water and they rarely use a microwave. All of their plates, cups and utensils are made from corn and, therefore, are biodegradable. The bakery boxes are made from 100% recycled materials and they only use unbleached products including parchment paper. Upon request, they can bake and serve you pies in a stainless steel plate instead of aluminum. Non-toxic cleaning agents are used in the kitchen, as well as, in the customer service area. And in addition to all of these great features, eco-friendly stain and natural wood building materials were used in the renovation of the space.
I've sampled several items from their bakery so far including a vanilla cupcake with chocolate frosting and sprinkles, an apple muffin, a blueberry muffin, and a chocolate espresso scone. Although, each item was delicious my favorite was the blueberry muffin!
