Let's Bake Banana Bread!

The other day I decided to bake a gluten free banana walnut bread!  It turned out to be rather easy to put together and ended up tasting quite delicious!

All you need are the following ingredients:

*2/3 cup soy milk
*1 tbsp fresh lemon juice
*1 cup brown rice flour
*3/4 cup potato starch
*1/4 cup tapioca flour
*1 tsp baking powder
*3/4 tsp salt
*1/2 tsp baking soda
*1 stick unsalted butter, softened
*2/3 cup sugar
*2 large eggs
*2 very ripe bananas
*1 cup chopped walnuts

To prepare:

1) Preheat oven to 350 degrees Fahrenheit.

2) Grease a 9 x 5 inch loaf pan.

3) Mix together soy milk and lemon juice and let stand.

4) Whisk together flours/starches, baking powder, salt, and baking soda in a bowl.

5) Beat together butter and sugar in a large bowl using an electric mixer at high speed until fluffy, about 2 minutes.

6) Add 1 egg at a time, beating until combined.  Then add bananas and beat until combined.

7) Now add the flour mixture alternately with the soy milk mixture and mix at low speed until batter is smooth.

8) Stir in walnuts.

9) Pour into loaf pan and bake for approximately 1 hour.

10) Cool bread in pan on rack for 20 minutes.  Invert bread onto rack and then turn bread right side up on rack to cool completely.
